Its story
A chipotle is a jalapeño left to ripen to red and then given days over smoke. That slow fire is where its character comes from: deep, toasted, with a heat that warms without shouting. On Colima sea salt it becomes the touch the grill was missing, and the morning egg, and the rim of a michelada.
How to use it
Add it at the end, over the finished dish: fried eggs, avocado, grilled corn, a burger. It also works before the grill, rubbed onto meat with a little oil, and on the rim of a michelada.
