Its story
Chiltepín is not farmed: it is found. It grows wild in the hills of north-west Mexico, small as a bead, with a heat that arrives all at once and leaves cleanly, without lingering to bother you. Some call it the mother of all chiles. This is the salt for those who want their food to answer back.
How to use it
Start with a little: it is properly hot. A pinch over ceviche, seafood or fresh fruit with lime changes the dish. It is the salt for the rim of a margarita or a michelada.
