Guacamole with tortilla chips
Crushed avocado with onion, chilli, coriander and lime, seasoned with Xalte Original salt so the avocado flavour stays in front.

Ingredients
- 3 ripe avocados
- 1/4 white onion
- 1 tomato
- 1 fresh green chilli
- 1 handful of fresh coriander
- 1 lime
- 1 tsp Xalte Original salt
- 150 g corn tortilla chips
Method
- 1Wash the tomato, chilli and coriander and dry them well with kitchen paper.
- 2Peel the onion and chop it very finely. Slit the chilli lengthways, take out the seeds if you want it milder and chop it very finely; chop the coriander leaves and tender stalks too.
- 3Cut the tomato in half, scoop out the seeds with a teaspoon and cut the flesh into small dice, about half a centimetre.
- 4Cut each avocado in half lengthways, running the knife around the stone, and twist the two halves to separate them. Lift out the stone with a spoon and scoop the flesh into a bowl.
- 5Squeeze the lime over the avocado and add 1/2 tsp of the Xalte Original salt. Crush with a fork until you have a cream with some whole chunks left in it.
- 6Add the onion, chilli, coriander and tomato and mix gently, without crushing any further.
- 7Add the other 1/2 tsp of Xalte Original salt, mix again and taste it with a tortilla chip.
- 8Serve it straight away in a bowl, with the tortilla chips around it for dipping. Avocado darkens in the air, so make it just before eating.
