Margarita with a passion fruit salt rim
The classic margarita of tequila, orange liqueur and lime, served with a passion fruit salt rim that adds fruit and tang to every sip.

Ingredients
- 50 ml blanco tequila
- 25 ml orange liqueur
- 25 ml freshly squeezed lime juice
- Ice
- 1 lime wedge
- 1 tsp Xalte Passion Fruit salt
Method
- 1Put a cocktail or margarita glass of about 200 ml in the freezer for 5 minutes. A cold glass keeps the drink cold, because this margarita is served without ice.
- 2Spread the teaspoon of Xalte Passion Fruit salt on a small flat plate in a thin layer. Make a small cut in the centre of the flesh of the lime wedge and run it around the outside of the rim of the glass, wetting a band half a centimetre wide.
- 3Tilt the glass and roll the wet rim through the salt, so the salt stays on the outside and does not fall in. Stand it upright and tap it lightly so the loose salt falls off.
- 4Use a measure to measure the 50 ml of tequila, the 25 ml of orange liqueur and the 25 ml of lime juice (roughly one lime) and pour them into a cocktail shaker. If you do not have a shaker, use a glass jar with a lid that closes tightly.
- 5Fill the shaker two-thirds full with ice, close it and shake hard for 15 seconds, until the outside feels very cold and looks frosted.
- 6Strain the drink into the glass through the shaker's strainer or a small sieve, pouring into the centre so the salt stays dry and leaving the ice in the shaker. Slot the lime wedge onto the rim using the cut you made and serve straight away.
