Fruit with lime and passion fruit salt

Fresh fruit cut into batons with lime juice and salt, as sold at street stalls in Mexico, where the passion fruit salt replaces the usual salt and adds more fruit.

Ingredients

  • 1 ripe but firm mango
  • 300 g peeled pineapple
  • 1 cucumber
  • 2 oranges
  • 2 limes
  • 1 tsp Xalte Passion Fruit salt

Method

  1. 1Peel the mango with a peeler. Cut off the two halves on either side of the flat stone in the centre and cut them lengthways into batons 1.5 cm thick.
  2. 2Peel the cucumber, cut it in half lengthways and remove the seeds by running a teaspoon down the centre. Cut each half into batons the same thickness as the mango and about 8 cm long.
  3. 3Cut the pineapple into batons of the same size, removing the core if it is hard. Peel the oranges by hand, pull off as much of the white pith as you can and separate them into segments.
  4. 4Divide the fruit between four wide glasses, standing the batons upright with the orange segments in between, or arrange it on a serving dish. If you are not serving it yet, keep it covered in the fridge, still without lime or salt.
  5. 5Just before serving, cut the limes in half and squeeze half a lime over each glass, spreading the juice over all the fruit.
  6. 6Sprinkle with the teaspoon of Xalte Passion Fruit salt, roughly 1/4 tsp per glass, and serve straight away. The salt goes on last because it makes the fruit release its juice; eat it with your fingers or a fork.
