Watermelon, cucumber and feta salad
A summer salad of cold watermelon, cucumber and feta with mint, where the passion fruit salt heightens the sweetness of the watermelon with a tangy touch.

Ingredients
- 800 g watermelon, rind removed, well chilled
- 1/2 cucumber
- 150 g feta cheese
- 12 mint leaves
- 2 tbsp extra virgin olive oil
- 1 tbsp lime juice
- 1 tsp Xalte Passion Fruit salt
Method
- 1Leave the watermelon in the fridge until you are ready to cut it, because this salad is best very cold. Cut it into dice of about 2 cm and remove the black seeds with the tip of the knife.
- 2Wash the half cucumber and cut it in half lengthways, without peeling it. Cut each half into thin half-moons of about 3 mm. Wash the mint leaves and dry them with kitchen paper.
- 3Arrange the watermelon and cucumber on a wide serving dish, without piling them too high. Drain the feta and crumble it over the top with your fingers, in pieces of roughly 1 cm.
- 4Drizzle the whole salad with the oil and the lime juice, spreading them evenly. Tear the mint leaves by hand into two or three pieces and scatter them over the top.
- 5Sprinkle with the teaspoon of Xalte Passion Fruit salt just before taking it to the table, because salt makes the watermelon release its juice if it sits. Serve straight away without tossing, so the cheese does not break up.
