Mango, avocado and rocket salad
A fresh salad of mango and avocado on rocket, where the passion fruit salt bridges the sweet fruit and the lime dressing.

Ingredients
- 1 ripe mango
- 2 avocados
- 100 g rocket
- 1/2 red onion
- 30 g pumpkin seeds
- 3 tbsp extra virgin olive oil
- 2 tbsp lime juice
- 1 tsp Xalte Passion Fruit salt
Method
- 1Toast the pumpkin seeds in a dry frying pan for 2 minutes, until they start to pop.
- 2Whisk the oil with the lime juice and half of the Xalte Passion Fruit salt to make the dressing.
- 3Slice the mango and the avocados and cut the onion into very fine strips.
- 4Spread the rocket on a serving dish, arrange the mango, avocado and onion on top, dress with the dressing and finish with the seeds and the rest of the Xalte Passion Fruit salt.
