Baked salmon with lime
Salmon fillets baked with lime and a drizzle of honey, an oily fish that the ginger in the salt lifts and perfumes.

Ingredients
- 2 salmon fillets, about 150 g each
- 1 tbsp olive oil
- 1 tsp honey
- 1 lime
- 1 tsp Xalte Garlic & Ginger salt
- 1 tbsp chopped coriander or chives
Method
- 1Take the salmon out of the fridge, preheat the oven to 200 °C (top and bottom heat) and line a tray with baking paper.
- 2Wash the lime and cut it in half. Squeeze one half into a small bowl and mix it with the oil and honey until the honey dissolves. Cut the other half into wedges and keep them for serving.
- 3Pat the salmon fillets dry with kitchen paper and place them on the tray skin side down, with space between them.
- 4Brush the top and sides of the salmon with the lime mixture, using a pastry brush or the back of a spoon.
- 5Sprinkle half a teaspoon of the Xalte Garlic & Ginger salt over each fillet, spreading it across the whole surface.
- 6Bake on the middle shelf for 12 to 14 minutes. It is ready when the flesh turns from bright orange to pale, opaque pink and flakes when you press the thickest part with a fork.
- 7Rest the salmon for 2 minutes out of the oven and lift it onto plates with a spatula. Spoon over any juices left on the tray.
- 8Wash and chop the coriander or chives, scatter them over the top and serve with the lime wedges to squeeze at the table.
